Slow Cooker Veggie Chili

I love a chilli and with the weather being a bit miserable I thought it might be nice to fetch the slow cooker out and make a big cosy veggie chilli! My version is loaded with plant points and sneaky veg, packed with fibre to support our gut health and natural plant protein from the beans too! It is really versatile how you can serve it, I turned it into a burrito style bowl with smashed avocado, salad, sweetcorn and some air fryer sweet potato fries (recipe in the notes section) but it is also just as lovely loaded onto a buttery jacket potato or served with some fluffy rice! This is perfect for batch cooking and meal prep too!

Notes

Air Fryer Sweet Potato Fries (Serves 4)

Ingredients

  • 2 large sweet potatoes (they would weigh around 700–800g in total)

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp garlic granules

  • ½ tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp cornflour (optional, for extra crispiness)

Method

  1. Cut the sweet potato into fries about 1cm thick. Keep the skin on for some extra nutrition

  2. Place in a large bowl and toss with the olive oil.

  3. If you have it in, sprinkle over the cornflour and toss again.

  4. Add the paprika, garlic granules, salt, and pepper and mix well.

  5. Arrange the fries in a single layer in the basket

  6. Air fry at 200°C for 16–18 minutes, shaking the basket halfway through.

  7. If you prefer them crispier, cook for an extra 2–4 minutes.

Very easy dinner to chuck into the slow cooker and forget about. Had lots of flavour, and another hit with the kids. I had a sweet potato left over so we made it as loaded fries.. absolutely delicious

Forgot a photo again 🤦‍♀️. Love this it's something I make regularly but with 5% mince beef & without courgette & carrot, we prefer it meaty This time I used courgette & carrot & 250g of mince, left out the mixed beans, but used the kidney beans. Yesterday we had sweet potato fries with it, leftovers today we had rice.. Really enjoyed this 😍

Really tasty, I found it to be a bit crunchy after having it in the slow cooker on low for 6.5 hours and I prefer everything quite soft so will have it on high next time

This is so yummy and so easy!! I didn’t add courgette as i’m allergic but i had celery instead. And I added the cocoa made it lovely and rich, another lovely one thanks Molly x
