Almond Croissant Muffins

These are inspired by one of the most popular recipes on here which are the almond croissant baked oats! These have been such a lovely little breakfast to take on the go this week but when I had chance I popped them in the microwave and had them warm with a dollop of yoghurt, some berries and a drizzle of honey and they were LOVELY!! I can’t wait to see what you think of these !!

Had no muffin trays so made it as a loaf Also had no flaked almonds so use pecans for top Tastes unreal !! Have ordered muffin cases so will defo make them again

Made and baked with gluten free oats, rice flour and added baking powder - amazing! Only have a giant 4 muffin tray so I have made 3 giant ones to cut in half for portion control 🫶🏼 These are a great way to prep for my chemo weeks when I need convenience and nutritional balance!
