Satay Chicken Loaded Flatbreads

This was such a tasty and easy dinner that tasted just like a takeaway and is perfect for those nights where you want something with minimal cooking!! Think juicy chicken thigh skewers served on warm flatbreads with crisp salad, crunchy peanuts and a creamy homemade satay sauce for drizzling and dipping it in! We had this loaded onto a flatbread but it would also be so good in toasted tortillas, tacos or served with some sticky rice too!

Notes

Want to make this higher in protein?

  • Swap the chicken thighs for chicken breast

Want to make this veggie?

  • Swap out the chicken for 550g of diced halloumi, marinate using the same method and cook in the air fryer at 200 degrees for 8-10 mins, flipping halfway!

Made with halloumi and tomatoes instead of carrots for my bf! He loved it, and the satay sauce is soooo good and creamy as a quick 5 minute cheat! 🥜

These are the best!!! Super tasty, I think the sauce is easily one of my favourites! I made the flatbread out of greek yoghurt and flour for extra protein too

This was quite literally the most delicious meal I’ve made of yours. I didn’t want to stop eating to take a photo so I can only show the left over skewers. We cooked the chicken on the bbq.

10000/10!!! Absolutely loved this, so quick and easy. My toddler didn’t like the chicken, she said it was too spicy so might try less spice next time then add extra back in at the end for us. My 5 month old was smacking her lips watching me eat it 😂😂
