Halloumi Pizza Rice

This is one of my favourite recipes for when we have a few veg leftover to use and want a quick and easy dinner and I thought it would also be a really good meal prep idea too! We really enjoyed it this week with some lettuce and a drizzle of garlic mayo- it is great hot or cold and simply leave the pepperoni if you want to keep it totally veggie!

Recipe was so easy and it was tasty. I think I just chose the wrong veg or that my ratios were a bit out as it took a while to cook through. Will definitely cook again with a different mix of leftover peppers (red) and leave out the courgette!

All worked perfectly and the teenagers wolfed down double portions! I added a handful of kale and spinach as that needed eating.

Not sure where I went wrong but I needed to give it about 1.5hrs in the oven and extra water to cook the rice... It was tasty once cooked though!
