Recipe was so easy and it was tasty. I think I just chose the wrong veg or that my ratios were a bit out as it took a while to cook through. Will definitely cook again with a different mix of leftover peppers (red) and leave out the courgette!

All worked perfectly and the teenagers wolfed down double portions! I added a handful of kale and spinach as that needed eating.

Not sure where I went wrong but I needed to give it about 1.5hrs in the oven and extra water to cook the rice... It was tasty once cooked though!

Hi Molly. I can see halloumi listed in the title and ingredients but can’t see it mentioned in the method. At what point do you add it? And do you fry it off first? Looking forward to making this. Gemma
