One Pan Mexican Fiesta Beef Rice

I think this might be my new favourite one pan dinner!!!!! This was SO good and packs in over 30g of protein, plenty of fibre and pretty much cooks itself. The chipotle paste adds so much flavour and then everything is finished off with some melty cheddar. This would also be a great dinner to use up any extra veg hiding in the fridge or customise to a veggie dinner by swapping the beef mince for some black beans instead! Leftovers will keep for up to 3 days in the fridge if you fancy it for meal prep toooo!

This, genuinely, is my absolute favourite! I was nervous about this as when I was cooking it, it smelt quite spicy, but once served for two it was devine. I also added mushrooms and served with homemade guacamole instead of sliced avocado- I also served with mozzarella instead of cheddar as I’ve just going a slimming club and I can have more of that as part of the plan but my husband and I LOVED IT and cannot wait to make it again! Thank you so, so much for all of your recipes x

Made this tonight, super easy! Substituted rice for Quinoa for something different and chanced liquid amount accordingly - absolutely delish!
