Healthy Jam & Coconut Cake

I used to absolutely love the jam and coconut sponge at school with a big portion of custard so for a snack this week I thought I would try and do a lighter take on a classic jam and coconut cake but this time made with Greek yogurt instead of butter for a soft sponge that is also packed with a bit more protein than usual. It is a super easy recipe and feel free to skip the coconut if you aren't a fan as just the jam is still lovely!

These were so tasty. The recipe makes a really light and airy sponge. Unfortunately I didn’t have any light olive oil so I used extra virgin olive oil and only half the quantity which seemed to work well. Super delicious and another fab recipe to add to my ever growing list of go to recipes on this app 💕

Came out great and the kids loved it. Was very easy to make and took very little time to throw together. I didnt have to cook for as long as receipe said.

These taste great and are really moist. All 3 of my children 11, 9 and 5 loved them. I didn't tell them about the vegetables until after they said how nice they were, I made them guess what was in them. Another healthy summer snack, they love the banana breakfast muffins too. The mix does resemble swap water when you mix the cocoa with the green wet ingredients together,so not sure they'd have eaten them had they seen that!!!

Can you use normal olive oil? For some reason I cannot get hold of the light olive oil
