Red Thai Chicken Meatball Curry

If you love a red thai curry you will love these chicken meatballs in a creamy red thai curry sauce! The sauce has all the lovely flavours of a thai curry and using chicken mince for the meatballs helps to keep them high in protein but also super soft and fluffy inside. Packed with goodness and flavour too, this is a great weeknight dinner!

Turn cooking mode on

Step 1

In a bowl, mix all the meatball ingredients until combined. Roll into small meatballs (around 12).

Notes

You can also cook the meatballs in the air fryer at 180 degrees for 18-20 minutes, flipping halfway.

To make this veggie, instead of using chicken meatballs feel free to add in a tin of legumes for a protein source or this is AMAZING with some fried halloumi!!!!

Hi, we put the curry paste into the meatballs or just the sauce please? Ingredients say no curry paste but method says to put them in with the rest of the meatball ingredients.
