Pepes Style Chicken Rice Bake

If you haven't tried Pepes, it is very veryyy similar to Nandos and is famous for its Pepes Chicken N Rice Box (which is Liams favourite thing in the world!!) so I have been trying to perfect a recipe for it for some time and think I have nailed it! This is packed with protein, some sneaky veg and all done in one dish! This one also makes for great meal prep too and I think it would be amazing with some fried halloumi too! Note: If you don't want to make this dinner as a dump bag, that's no problem! Just add all the ingredients listed to the baking tray at the same time and cook using the instructions below!

Was yummy but didn’t think it tasted massively flavoursome. Also we made 4 portions but felt there was only enough for 3 good size portions ☺️

I made two: (1) chicken and (2) veggie using a block of halloumi and one Quorn fillet (plus vegetable stock instead of chicken). This was a great family dinner and went down well. My kids loved the chicken and have asked if I can do it with wraps next time so I am going to use the same flavour mix (without the stock cube) and cook it on the pan instead. I will then add it to some wraps instead of rice. I would absolutely recommend this recipe. *The picture is the veggie version
