HEALTHIER THAN THE SHELF EPISODE 12, MINI MARYLAND COOKIES🍪🍫 Welcome to the 9th episode of new series, Healthier Than The Shelf! 🛒 this is all about turning supermarket classics into something more nutritious, I’m going to do everything from biscuits, cakes & sweets to crisps, ready meals and freezer favs ! 🎉🛒 I was thinking with the kids going back to school this week if there was a behind I could make that would work well for a little lunchbox snack and I used to loooove these in my lunchbox when I was little!! In just a handful of the mini cookies there is nearly 6g of fibre, they’re naturally sweetened with honey and they’re made with just a few really simple ingredients unlike what you would get from the shop-bought version! ❤️🍫🍪

Method

Turn cooking mode on

Step 1

Blitz 100g of the oats into a flour, leaving the other 75g whole for texture. You can skip this if you don’t have a blender. Mix the oat flour and whole oats with the plain flour, flaxseed, baking powder, bicarb and salt.

These are INCREDIBLE! I’m lactose and wheat free and LOVE cookies but I haven’t had anything like this in years so these feel like a real treat. Both my kids love them, they didn’t last very long haha! We’re making more over the weekend for lunch boxes - so good!
