One Pan Peri Peri Halloumi Rice

Anything Nandos and halloumi is always a big hit and this delicious one-pan dinner is inspired by the Nando’s peri peri rice! Topped with halloumi, chickpeas for some extra fibre and protein as well as plenty of vegetables- it’s all cooked together in a smoky, slightly spicy peri peri sauce. Perfect for a quick and easy midweek dinner with minimal washing up!!!! Loved this one!

Hi Molly! Do you think white beans (cannellini) would work here instead of chickpeas ?
