Nans Oat & Dark Choc Mini Cookies

Happy weekend baking club and happy bank holiday!! I was thinking about a bake this week that would be great for back to school lunchboxes so I thought Nanny Joyce’s cookies would be perfect !! This is a recipe adapted from my Nan’s mini oat biscuits that she would always make with raisins, anybody that knows me well knows how famous these are- she is from Wolverhampton and used to call them her ‘oatcakes’ which we found out had a totally different meaning when we moved to Stafford!!! These cookies are a more nourishing twist on her recipe, made with ingredients that sneak in a little extra fibre and goodness and perfect for when you fancy something sweet! Feel free to use dark chocolate, raisins or nuts or they are lovely plain too- shoutout to my lovely Nan for the recipe inspo!!
