Method

Turn cooking mode on

Step 1

Add the pork mince, grated carrot, grated courgette, garlic granules, mixed herbs and cajun seasoning to a large bowl. Mix well until completely combined.

Notes

How To Store Them ⬇️

  • Store in an airtight container in the fridge for up to 4 days

  • For longer storage (this is what I did) wrap each McMuffin individually and freeze for up to 3 months.

How To Reheat⬇️

From chilled:

  • Microwave for 1½–2 minutes until piping hot throughout.

From frozen:

  • Defrost overnight in the fridge, then microwave for 2 minutes until hot

  • Or microwave from frozen for 3–4 minutes, checking halfway through

Air fryer option:

  • Reheat at 180°C for 5–7 minutes from chilled, or 10–12 minutes from frozen until they are completely heated through!

Incredible recipe - quick and easy to make, perfect for all occasions! I've made a batch of them so I can keep them in the fridge and reheat when working from home instead of just grabbing an unhealthy snack! Thank you so much for sharing 🥰

Made these for my husband's lunches (used square thins instead of muffins). He said they taste so good. I think next time I will swap the courgette and carrot for parsnip and apple (I’ve made sausage rolls with this duo before and because my kids couldn’t see the veg/fruit they ate them no complaints!).
