Lighter Carbonara Mac & Cheese

Carbonara and Mac & Cheese are 2 of the top tier comfort foods so I thought I would combine them in a lighter style for this pasta dish! There is 2 sneaky veg in there and the sauce is still traditional but made lighter with some light cream cheese to help with creaminess. We loved this one, I hope you do too!

Boil the macaroni in salted water until al dente. Reserve a bit of pasta water, then drain.

Notes

Grated cauliflower is optional but good for sneaky veg! Dijon mustard is optional and boosts flavour. Reserve a bit of pasta water to loosen and create a silky, creamy sauce. TOP TIP: no direct heat here or the eggs will scramble.

Served with garlic carrots done in the air fryer. Used half a head of cauliflower and added spinch. Next time I would add a leak just to add to it. One added to love list 😊

Used spaghetti instead of macaroni cheese and popped some hidden veg spinach in. Honestly so creamy and tasty!
