Hidden Veg Sweet Potato Mini Pizzas

Welcome to the first episode of my new series HIDDEN VEG❤️ the series all about seeing what veg we can sneak into bakes, cakes, snacks and meals to get some extra fibre and nutrients in without anybody noticing toooo much!!🤣🩷 Starting off with these pizzas- the veg is made using sweet potato to pack in some extra fibre as well as vitamin A and C too!! I’ve popped the air fryer and oven method too!

Method

Turn cooking mode on

Step 1

Cook the sweet potato. Boil or steam until completely soft. Drain really well, mash until smooth and leave to cool slightly.

Notes

Leave to cool completely, then refrigerate in an airtight container for up to 4 days.

Reheat in the air fryer for around 3–5 minutes at 180°C, or in the oven until piping hot.

Made these today with my kids for lunch, and then for their lunch box in the week! (Ones got vegan cheese for my dairy allergy child, that’s why it looks slightly different) They’ve come out stunning, quite messy to make but worth it 😍

First attempt at these and they are amazing. Forget snacks for the kids, I would make a large one for pizza night! Obviously not as aesthetic as Molly’s and if I was to do again (which I will) I will use a rolling pin to get the base thinner crust, but first attempt was a success. They tasted great!

I froze mine. Just let defrost partially and then reheated in air fryer to get the crispy consistency

Not quite as pretty as Molly's and used different toppings (sweet chilli chicken and sweet corn, other flavor :Serrano Ham and sweetcorn). Gave my sweet potato dodging husband one of each and he devoured them 🤫
