Cookie Dough Baked Oats

Welcome to this weeks 60 minute Sunday! For breakfast I prepped these cookie dough baked oats (I think perhaps I’m going through a cookie phase 🤣🤣🤣) these are such a filling breakfast and I do love having baked oats on hand as they’re also transportable too so perfect if you have to get up and straight out for work! I have really loved popping these in the microwave for about 30 seconds so the chocolate melts and I served with a big dollop of Greek yoghurt and a drizzle of honey!🍪

Store in an airtight container in the fridge for up to 4 days | this is sooo nice warmed up in the microwave with some Greek yoghurt and a drizzle of honey

First time making baked oats and I'm sold! I can't believe how sweet these are, pay recipes can be a bit dry/tasteless sometimes. Will definitely be making again and will probably experiment with blueberries etc too.

I made these as a change from the banoffee muffins I keep making on repeat. I used large dark chocolate buttons and added three tsps of melted caramel for extra indulgence. They did not disappoint and I will be making them again 🤎

I’ve found a lot of baked oats recipes are still wet in the middle even when cooked, but my brain can’t handle this. Do these cook up like that or are they more of a banana bread type texture?
