Hidden Veg Cheesy Chicken Sausage Rolls

I don't know about anybody elses other half but Liam could live on a Greggs sausage roll, he absolutely loves them!! These chicken sausage rolls aren't quite a Greggs but they are still sooooo soooo tasty!! They are packed with lean chicken mince, hidden broccoli AND carrot as well as melty cheddar. They're high in protein, perfect for meal prep lunches or snacks and they are freezer friendly for up to 3 months so make a great little thing to keep a stock of for when anybody gets hungry! I think these would be a great one to get the little ones involved in making over the summer holidays too!

Made these with a slight twist. Used pork mince and black pudding and added some homemade Caramelised onion which is what made the filling a bit too wet. Really delicious though.

The meat mixture was lovely, I used pork mince but the light pastry was a disaster. It stuck to the paper and I had to chuck it. I asked chat gpt what to do with the mince and made a meat loaf. Will try normal pastry next time.

I like this and will try different variations of meat and veg I cooked mine long and will cut into smaller chunks, I had left over mince so actually could of done with two packs of puff pastry

My toddler absolutely loves a sausage roll so I was so excited to see these and praying that she loved them. Super easy to make, we ended up having them for dinner with a salad. Would definitely make them again!
