Slow Cooker Thai Cashew Chicken

I think I have found my new favourite slow cooker recipe! If you love cashew chicken from the takeaway, you need to give this recipe a try! It is the perfect dinner for a busy day as you can chuck the ingredients into the slow cooker in the morning and forget about it, all you have to do is pop some sticky rice in the microwave and thicken with some cornflour and the dinner is ready to go. This would also be a super tasty meal prep and would also be lovely with some egg noodles too!

Add all of the ingredients to your slow cooker and cook on high for 3–4 hours or low for 7–8 hours, stirring halfway if you can.

  • Swap out the chicken for 2 x 400g of chickpeas or 550g of diced halloumi!

  • This would also work sooo well with around 450g of cooked prawns!
