Slow Cooker Cajun Chilli Beef Rice

If you are looking for another slow cooker recipe to add to your repertoire then you need to try this! I always think the best way to cook a chilli is the slow cooker as all the flavours have chance to develop all day long! It is really easy, packed with so much flavour and with some sneaky veg too! This is also a great one to meal prep and make completely veggie by swapping the beef mince for some extra beans too!!

Turn cooking mode on

Step 1

Add the beef mince to the slow cooker, breaking it up with a spoon followed by the onion, peppers, spring onions, sweetcorn, passata, taco beans, tomato purée and all the seasonings.

Notes

Want to make this veggie?

  • Swap the mince beef for an extra tin of drained beans!

Want to make this a dump bag?

  • Add all the ingredients except for the rice, stock and cheese. Mix well, seal and label and freeze. Leave to de-frost overnight then add to the slow cooker and cook using the instructions below and use 500ml of beef stock instead of 600ml (as freezing/de-frosting will add liquid!)
