Hidden Veg Strawberry School Cake Loaf

Welcome to this weeks Weekend Baking Club! This is inspired by the pink school cake I used to have at school but this time with hidden veg! It’s a soft vanilla sponge (filled with carrot- which I promise you can’t taste!!!) and the pink frosting gets its colour from blending up freeze dried strawberries with some light cream cheese and Greek yoghurt! This was such a fun bake and a great way to sneak some nutrients in to any fussy eaters too!!!

Can I use Greek style yoghurt instead of Greek yoghurt? I’m trying to use up what I have on hand rather than buying especially for the recipe

Sure, but is there a reason you went for Greek yoghurt? Is it directly to do with better health benefits or was it to do with texture, viscosity etc

It’s to do with making it higher in protein and it’s thick so doesn’t make the batter really wet or dense
