One Pan Gnocchi Lasagne

Lasagne is one of my favourite foods and a great way to pack in lots of veg, but during the week it’s a bit of a time-consuming dinner. Using gnocchi is an easy way to still enjoy all of the flavours in a quicker and easier recipe!

In the pan, fry off the veg in some olive oil until soft before adding the mince beef and frying until brown.

This was really tasty—my teens hoovered it up. I followed the recipe for 4 and it could probably feed at least 8! Not complaining as I love having leftovers.
