Add in 300g of diced chicken breast when you cook the peppers and onions. This would also work great with 250g of 5% fat mince beef for a more 'burrito' type dish!

This is amazing! I made with the chicken included and used chicken stock as I didn't have any vegetable handy. Even my vegie hating teen loved it. I just need tips on how not to snack on the lovely crispy halloumi whilst the rest is cooking 🤣
