Mini Pesto Protein Pizzas

For lunches this week I prepped these mini pesto protein pizzas! I have a similar recipe where I turned them into mini pepperoni pizzas too! The bases are really customisable and you can make them whichever size you fancy and add all your favourite toppings! I’ve been having them in the air fryer for a few minutes with a rocket salad but they’re also great cold & make a great little lunchbox or afternoon snack for little ones too!

A gu pudding pot works sooo well here too! Store in the fridge in an airtight container for up to 4 days or freeze for up to 3 months

I had to do an inspired version as I’m due food shopping so needed to use some things up. These were made with tomato puree instead of pesto and Red Leicester instead of mozzarella - the veg is hidden under the cheese as I’ve done them for my kids lunchboxes and they are very fussy 😅 I intend on doing the proper version in the next few days.
