Ingredients: 500 g 5% fat mince beef; 1 Onion; 2 Carrots; 1 Courgette; 1 tsp Garlic granules; 1 tbsp Tomato purée; 1 tin Chopped tomatoes; 2 tsp Dried oregano; 40 g Butter; 40 g Plain flour; 500 ml Milk; Salt; Pepper; 8 Mini tortillas; 150–200 g Mozzarella; 2 tbsp Olive oil; 1 tsp Garlic granules; 1 tsp Mixed herbs

I loooove a lasagne but I do think they can be a bit time consuming for a weeknight dinner so this is my compromise! All the classic flavours of the lasagne we know and love but baked into a golden cheesy taco packed with protein (and some sneaky veg too!). This was our favourite one this week so I hope you enjoy as much as we did!!

My tacos were super crispy on the top but soggy on the bottom I just have done something wrong! They were tasty though 😃

As with all the other recipes these are great! I prefer the marry me chicken as you can pick those up, due to the nature of the filling I found these have to be eaten with a knife and fork.

Delicious! My white sauce wasn’t the greatest (I couldn’t find my whisk 🤦🏻‍♀️) but even that didn’t stop me getting my lasagne fix. The garlic oil makes it so tasty. I batched cooked so next time it’s just the white sauce to make and bake.
