Chickpea Cookies

Happy Weekend Baking Club! For this weekends bake we have these chickpea cookies! This recipe makes about 5-6 big cookies! They have a soft and nutty flavour and are packed with fibre and healthy fats meaning they will help to keep you feeling fuller for longer (as well as giving you a snack you are going to really look forward to!) so if you have a tin of chickpeas that you don’t know what to do with- this is the weekend bake for you! 🩷

Tasty cookies, they don’t taste like they’re made from chickpeas. I used wow butter instead of peanut butter so my kids can take them to school. I added some oats but could have used some more as they were pretty soft even after cooling. I made 16 smaller cookies instead of large ones.

Amazing! My three year old is a big fan - which is why there’s less in the photo! Added a tablespoon of oats (unblended) to thicken the texture.

I made these today and they are delicious! You would never know they have chickpeas in them. I also added the oats. I had to cook them a little longer as they seemed to take an age to cook! xx

I added some blended and whole oats through the cookie mixture to add some more texture. Absolutely delicious and you’d never know there was chickpeas in it. 🍪

I made these but i think i needed some oats as they didnt firm up very much, but they were still very tasty
