Banoffee Muffins

For breakfast prep this week we have these gorgeous banoffee breakfast muffins! I popped into Tesco and noticed that they had this new salted caramel sauce in the baking isle and I thought hmmm, I need to use that! These are packed with fibre and slow releasing carbs from the oats and banana making them a great on the go breakfast prep- even better if you can have them with a dollop of greek yoghurt for protein! If you have time, these are also AMAZING when you reheat them for a few minutes in the air fryer or 45 seconds in the microwave so the chocolate and caramel melts too! This recipe either makes 6 large muffins or 10-12 smaller ones so feel free to make whichever size you prefer!

Realised I didn’t have muffin cases, or tray, so made into a loaf! Seemed like a good idea until the caramel spilled out after cutting but tastes amazing !! 😋🍌🤪

Caramel oozing out 😋😋 thanks for making such easy recipes to follow that taste delicious!! (Wasn’t using the app/recipes for weight loss just wanted to cut out a lot of processed rubbish and eat more nutritious meals but after one week using your plans I was 6lbs down!!!) Didn’t have one craving for sweet stuff last week as you include recipes like this that feel like you’re having such a treat but with more nutritious values, can’t thank you enough for creating this app! 🫶🏼

Husband approves and I'm sure my children will too later. I doubled up the mixture so have done caramel and kinder bueno muffins and then a large banana bread loaf too. A new firm household favourite 😍

These are really yummy and super moist. I tried with peanut butter but can’t wait to use a spread or curd next time! I actually had already spooned all the mixture into the cases, so ended up marbling the peanut butter into the mixture which worked just fine, though they’ll be even better with a dollop of spread inside as they are intended to be 🙈 I used almond flour instead of oats which worked really well!
