Happy Healthy Kitchen- Meal Plan 12

Welcome to the Happy Healthy Kitchen Meal Plan 12! As the weather is getting warmer, I thought a week of dinners that you can just throw in the oven and forget about would be a good idea as it means no standing over a hot hob! These are all light but packed with flavour, protein and lots of sneaky veg too! I prepped all of these as dump bags but you can also just throw them straight into a baking dish on the day too! Don't forget to submit any pictures of recipes you make for this months challenge! You will need to submit 1 picture of a recipe you have made each week for the next 4 weeks (so 4 pictures in total)- the winner will be announced on the 26th of June and the prize is a Ninja Crispi in the colour of your choice! Creamy Lemon Pepper Salmon Orzo

As the weather was really hot this week I wanted something light and fresh and this dinner hit the SPOT! Lemon and pepper are such a match made in heaven and make this dish feel sooo bright, it adds such a lovely flavour the creamy orzo and perfectly cooked salmon! This would be a great one for hosting or when you just fancy a bit of a lighter dinner. Note: If you don't want to make this dinner as a dump bag, that's no problem! Just add all the ingredients listed to the baking tray at the same time and cook using the instructions below!

Chicken Pad Thai

If you are looking for a Friday fakeaway, this is the recipe!! If you love satay chicken and saucy noodles, these will be right up your street. Packed with fibre, veggies, colour and protein- this recipe ticks all the boxes of a balanced and tasty dinner with only one pan to wash up! Woooo! Cajun Sausage Pasta Bake

You can't beat a good sausage pasta bake- it is proper comfort food and this one is sweet, smoky, cheesy and super easy! Packed with lots of sneaky veg but in a lovely rich ragu sauce so it is hard to spot them! I have used caramelised red onion sausages (they are from Tesco and taste sooo nice) but feel free to use whatever you fancy- even chicken sausages work well if you want a leaner option! Butter Chicken Baked Rice

You know we LOOOVE a curry in this house and this is one of the easiest ways to do it! The rice gets cooked in all the herbs and spices from the sauce and topped with the melting cheese it is just sooo good! It makes for perfect meal prep as the leftovers also keep really well too! (As always, feel free to skip the dump bag stage and cook as normal by just adding everything straight to the baking dish!) Pepes Style Chicken Rice Bake

If you haven't tried Pepes, it is very veryyy similar to Nandos and is famous for its Pepes Chicken N Rice Box (which is Liams favourite thing in the world!!) so I have been trying to perfect a recipe for it for some time and think I have nailed it! This is packed with protein, some sneaky veg and all done in one dish! This one also makes for great meal prep too and I think it would be amazing with some fried halloumi too!
