Red Thai Salmon Bites

If you have tried and loved my honey garlic salmon bites, I think you will LOVE this version! It is sooo tasty, so light and fresh and makes for a perfect summery dinner! I served with some sticky rice, broccoli, carrots and cucumber but I think this would be AMAZING with edamame beans or doubling up on the sauce and cooking some noodles to go with!

I swapped the salmon for chicken, just because thats what I had! I also prepped in advance and froze it for a no hassle weeknight option. SO TASTY! Will defo be giving a go with salmon soon. Served with jasmine rice and broccoli and baby corn cooked pan seared with soy sauce *chefs kiss*

I’m struggling a bit with meal planning as I add the meals to shopping list function on the app but a lot of the meals are missing what they go with I.e rice and vegetables on this one.
