Protein & Fibre Packed Lentil Loaf

I have been asked to share some more gluten free recipes but I still want to make sure they are healthy (and importantly, TASTY!!) and this lentil loaf is so good! It is a great alternative to GF or 'high protein' bread as it is also loaded with fibre from the lentils too! You can customise with whatever mixed seeds you fancy but I love having a slice of this for breakfast or lunch with some smashed avocado or poached eggs- if you like marmite too it is also great with that! Just make sure you soak the lentils in a lot of water (I did around 500ml) overnight or for at least 4 hours before blending!

Notes

Fridge

  • Store in an airtight container for up to 4 days.

Freezer

  • Slice and freeze individually for up to 3 months.

  • Defrost overnight in the fridge before reheating.

Reheating

  • You can reheat in the toaster, air fryer or microwave!

Really tasty! I wasn’t convinced it was going to hold together as it was quite wet when it went in the oven, but it does. 🤩 really nice GF option 💜
