Mexican Style Prawn Fried Rice

This is one of those easy and speedy dinners which is great when you need a healthy dinner in a hurry and it is also a really good one for using up any leftover veg at the end of the week! I think this was one of my favourite meals this week, it was sooo flavorsome and contains half of your daily fibre requirements as well as being packed with over 30g of protein but still tasting really light and fresh! If fajitas or burritos are a hit in your house, I think you will love this one!!
