High-Protein Sheet Pan Pizza

This is my easy sheet pan protein pizza which uses a Greek yogurt dough to give it a sneaky protein boost! It is really easy to do and you end up with a Greggs style pizza slice which is perfect to take to work or reheat in the air fryer! I added pepperoni as my topping as this is what Liam wanted this week but feel free to customise with anything you fancy- peppers, onions, ham, pineapple, chicken, mushrooms- literally anything works!!

Notes

How To Store...

In the fridge

  • Allow the pizza to cool completely

  • Store slices in an airtight container or wrap well in foil/cling film

  • Keeps for up to 3 days in the fridge

In the freezer

  • Cool completely, then slice into portions

  • Wrap individual slices in cling film or baking paper and place in a freezer bag or airtight container.

  • Freeze for up to 3 months


Reheating

Air Fryer (I think this is the best method)

  • Reheat slices for 3–5 minutes until hot and the base is crisp again.

Oven

  • Heat at 160°C fan

  • Place slices on a baking tray and warm for 8–10 minutes.

Microwave

  • Heat for 1–2 minutes on full power, depending on the size of the slice.

  • This is the quickest option, but the base will be softer rather than crisp...

From Frozen

  • Defrost overnight in the fridge, then reheat using the air fryer or oven.

  • Alternatively, cook from frozen in the air fryer at 170°C for 6–8 minutes until piping hot throughout.

These.are.amazing!!! I made this for tea with my 6 year old who loved being involved. We changed the toppings as she's not a big fan of pepperoni and did half and half. One side ham and cheese and one side BBQ chicken and sweetcorn. In her words 'this is so yummy, 2836 out of 10'
