Hidden Veg Double Chocolate Muffins

If you have any spinach and courgette haters, I promise you that this recipe will convert them!! These muffins make such a good on-the-go breakfast or snack! They are soft, chocolatey and naturally sweetened with honey and are packed with spinach and courgette that you genuinely can't taste as they both have quite mild flavours and when you blend them, they literally disappear into the batter (I actually promise you)! I added dark chocolate but feel free to add in any extras like berries, nuts or even some milk/white chocolate chips if you fancy too!

Can't believe my kids are eating spinach and courgette! So easy to make. I added a little bit of extra cocoa powder and honey and a touch of salt to the batter to disguise the spinach taste a bit more and they turned out amazing.

These taste great- you would never know they have spinach and courgette in! I didn’t know if my kids would like them after seeing the green mix but they loved them. We made them for my son’s birthday (hence the sprinkles) He now wishes we made enough for his party!! Another big, healthy hit 😃 I am obsessed with all the baking recipes!!

These are so so good! My little girl has just had two for breakfast. I forgot to add the milk in the blender so added it at the end when I remembered so I did over mix them slightly but still taste amazing

These taste great and are really moist. All 3 of my children 11, 9 and 5 loved them. I didn't tell them about the vegetables until after they said how nice they were, I made them guess what was in them. Another healthy summer snack, they love the banana breakfast muffins too. The mix does resemble swap water when you mix the cocoa with the green wet ingredients together,so not sure they'd have eaten them had they seen that!!!
