I couldn't find silken tofu so used firm, I blended it with some water and the other ingredients and it worked well. Might be even better with silken but if, like me, your local shop doesn't sell it this works too.

My 15yr son was suspicious about it because it didn’t look like normal pesto and said it was slightly tangy. I said it must have been the spring onions (knowing full well it was the tofu and he wouldn’t have eaten it!) he ate the lot!

This is such a delicious salad i’ll be adding different things to it like tuna. Would never have thought to use silken tofu like this but it makes such a creamy sauce. ( challenge week 2 entry) x
