Protein-Packed Pesto Pasta Salad

This was AMAZING! You would NEVER EVER know it contained silken tofu as the base! Tofu is a great source of plant protein as it contains all 9 essential amino acids, it’s also a great source of calcium and is great for anyone who can’t have dairy but still wants some creaminess! It literally has 0 taste on its own but works so well in sauces! This has over 26g of protein with the chicken but still has 12g of protein per portion if you wanted to keep it fully plant based too! My 15yr son was suspicious about it because it didn’t look like normal pesto and said it was slightly tangy. I said it must have been the spring onions (knowing full well it was the tofu and he wouldn’t have eaten it!) he ate the lot!
