Chinese Chicken Curry Rice

It's day 2 and we have this really tasty and easy Chinese style chicken curry rice, all made in the slow cooker! If you are like me and love the curry sauce from the Chinese with some fried rice, you will love this! It is packed with lots of veg and I used chicken thigh as the protein source but you could easily swap this for diced beef, chicken breast or even leave it out to make it veggie. The rice cooks in the slow cooker with the chicken and the veg so the only bit of cooking you need to do is the chopping too!

Notes

You can also prep this recipe as a dump bag like I did this week, here are the instructions:
- Add everything to your dump bag (except for the chicken stock and rice) mix well, seal, label the bag 'Chinese chicken rice' and store in the freezer
- Defrost the dump bag in the fridge overnight
- Follow the instructions listed below to cook in the slow cooker!
