Air Fryer Fajita Salmon Bowls

The salmon bowls are always super popular on here so here is another one for you to try! This time we've gone Mexican theme and it might be my favourite one yet! The salmon is coated in lots of mexican flavours and roasted in the air fryer with some veg then served with rice, smashed avo and some salsa! It is sooo flavour packed, ready in under 20 minutes and the perfect balance of protein, healthy fats, fibre and carbs for a filling but healthy weeknight dinner!!

Turn cooking mode on

Step 1

Season the salmon. Add the salmon to a bowl with the olive oil, smoked paprika, cumin, garlic granules, chilli powder, mixed herbs, coriander and a good pinch of salt and pepper. Rub it onto the fillets gently until they are completely coated.

Notes

Want to make this veggie?

  • This one actually works really well if you slice 550g of halloumi and coat in the seasonings then fry in a pan with a splash of oil until golden!!

Want to make this higher in protein?

  • Feel free to swap the salmon for cod or chicken- if using chicken breast just add an extra 6-8 mins to the cooking time!
