Welcome to the Happy Healthy Kitchen Meal Plan 14! I hope you have all had a good week so far! I really enjoyed this week and think it’s been my favourite mix to far! A mix of speedy one pan and slow cooker dinners perfect for busy days and packed with protein and fibre! Slow Cooker Veggie Chili
I love a chilli and with the weather being a bit miserable I thought it might be nice to fetch the slow cooker out and make a big cosy veggie chilli! My version is loaded with plant points and sneaky veg, packed with fibre to support our gut health and natural plant protein from the beans too! It is really versatile how you can serve it, I turned it into a burrito style bowl with smashed avocado, salad, sweetcorn and some air fryer sweet potato fries (recipe in the notes section) but it is also just as lovely loaded onto a buttery jacket potato or served with some fluffy rice! This is perfect for batch cooking and meal prep too!

Slow Cooker Thai Cashew Chicken
I think I have found my new favourite slow cooker recipe! If you love cashew chicken from the takeaway, you need to give this recipe a try! It is the perfect dinner for a busy day as you can chuck the ingredients into the slow cooker in the morning and forget about it, all you have to do is pop some sticky rice in the microwave and thicken with some cornflour and the dinner is ready to go. This would also be a super tasty meal prep and would also be lovely with some egg noodles too!

Pesto Chicken Smash Burgers
You probably know by now I have a bit of an obsession with pesto and it is probably one of my favourite things to come out of a jar-haha! I really wanted to see if it would work as a smash burger and OMG, these are sooo tasty!! The chicken smash burgers are so naturally juicy and packed with flavour, they're topped with melted mozzarella and work so well with the homemade pesto mayo, peppery rocket and sliced tomato! I can't wait to see what you think of these for a speedy protein packed dinner! Feel free to use red pesto too if you prefer!!

Indian Style Chicken Burritos
This is a fusion of 2 of my favourites cuisines, Mexican & Indian! I cannot even tell you how tasty these were dunked into some mango chutney and they will definitely become a repeat for us when we have a craving for an Indian takeaway! These are high in protein from the chicken but you could also bulk them out with some canned chickpeas for some extra fibre and protein too! Feel free to use whatever curry paste you prefer, I used tikka but korma or madras would also work depending on how spicy you like your curry

Healthy Meatball Subs
These healthier meatball subs are packed with flavour, hidden veg and plenty of protein and I think they would knock the socks off the subway meatball marinara! You can enjoy the meatballs and the ragu with some spaghetti if you fancy but I highly recommend the metro rolls from Aldi, they are just like the real deal from subway and make for a really tasty and quick dinner!!
