Salmon Crispy Rice Salad

I am sure you have probably all seen the viral crispy rice salad trending online and I had to do a spin on it! Using salmon as the protein source I wanted to go down the asian theme as I thought it would work well and it didn't disappoint. This is sooo flavorsome, fresh and will leave you feeling so good after it! A great speedy and light dinner for a warmer evening and tastes even better the next day too!

REALLY nice! The sort that you keep going back for more of. I put the rice in first, then added the salmon in on a separate tray. Then left the rice in the turned-off oven whilst I flaked the salmon, just to make sure it was really crispy. Will definitely make again. So simple and so tasty!
