Mediterranean Couscous & Chickpea Salad

This was such a lovely light and fresh lunch that’s packed with plant points and perfect for warmer weather! It has protein from the chickpeas but you can also add in some cooked chicken or tuna for an extra boost of protein or if you want to keep it veggie, some cooked halloumi or crumbled feta is LOVELY too!! This is also a salad we often prep and take to BBQs and it always goes down an absolute treat!!🩷🎉
