Happy Friday all! Welcome to this weeks Happy Healthy Kitchen Meal Plan! For this week we have some easy takeaways, sneaky veg recipes and this was also super budget friendly coming in at around £30 for the food shop too! Also want to say congratulations to Amber S who is the winner of the July competition and has won the Morphy Richard’s Ice Cream Machine!🍦 For the August challenge the prize is a slow cooker- (I thought it might be nice as we move into slow cooker season in September !!) to enter all you have to do is submit 4 recipe recreation pictures to the app and the winner will be selected again at the end of the month🎉🩷 Have a great bank holiday weekend all!

Hidden Veg Butter Chicken Loaded chips

I asked the other day which recipes you would like to see more of and hidden veg recipes were super popular! I thought it might be nice to show you a really easy way to sneak A LOAD of veg into a curry sauce which is perfect for fussy eaters or little ones too as the curry isn't too spicy! The sauce also freezes for up to 3 months so it is a good one to batch cook too! This is great with rice or a naan but I turned it into loaded chips for something a bit different and it really felt like street food!!

Hot Honey Halloumi Noodles

I think anything with halloumi and hot honey is just 10/10 and these noodles might be one of the best recipes I think I have ever had! The salty halloumi goes soooo well with the hot honey and creamy sauce and is also great for hiding in some veg! It is a proper comfort food dinner that feels like a takeaway but still sneaks in some of your 5 a day- woop woop!!

If you love the rice boxes from KFC here is how you can make a super easy and high protein version at home! These are soooo good and I made a protein supercharger sauce to go with which we have now become obsessed with! Feel free to customise and add in any little salad bits you fancy too as it is really versatile!

Sticky Asian Chicken Kebab Bowls

The chicken skewer bowls are always my most saved recipes on the app and I hope this one will be enjoyed by you all too!! This one is juicy air-fried chicken coated in a sweet and sticky Asian-inspired glaze!! I turned it into a 'Molly bowl' and served with rice, crunchy veggies and edamame- I also doubled up on the sauce so I had some extra to dip and it was sooo good!! It would also be a great meal prep for wraps/pittas too!

Cheesy Bolognese Enchiladas

I thought this would be a little fun twist on two family favourites! I always think a spag bol is another great way to hide some sneaky veg in and anything with cheese and garlic butter is also always going to be a winner!! This is super easy, really quick and if you are looking at reducing your UPF intake I highly recommend the Crosta Mollica wraps which you can get in Asda and Tesco as the ingredients in them are brilliant!!
