Welcome to the Happy Healthy Kitchen Meal Plan 19! It’s another week of easy summer dinners that are perfect to get you in and out the kitchen quickly but still having a high protein and nutritious dinner! Dump & Bake Chicken Curry Noodles

Here is another throw-it-all-in dump & bake dinner with minimal prep perfect for when it is tooooo hot to cook. The noodles cook in the sauce, soaking up all the flavour while the chicken stays nice and juicy too! Feel free to customise with any veggies you prefer and if you want to make this more a satay chicken style curry, add in a few tablespoons of peanut butter!!!

Parmesan Salmon Linguine

I looove a salmon pasta dish to pack in some healthy fats and omega-3 and this one is no exception! It is a super speedy dinner, perfect for summer and great for using up any leftover veg you have lying around in the fridge! I used fresh salmon fillets but using a few tins of salmon would also work really well as we end up shredding it anyways and it is cheaper that way too but it is completely up to you!

Slow Cooker Cajun Chilli Beef Rice

If you are looking for another slow cooker recipe to add to your repertoire then you need to try this! I always think the best way to cook a chilli is the slow cooker as all the flavours have chance to develop all day long! It is really easy, packed with so much flavour and with some sneaky veg too! This is also a great one to meal prep and make completely veggie by swapping the beef mince for some extra beans too!!

Cheesy Veggie & Halloumi Tikka Tacos

This might be one of my favourite recipes to go onto the app!! If you love halloumi and you love a curry, you will absolutely love these cheesy baked tacos (because what is better than double cheese, haha!!!). These are packed with protein from the halloumi and the curry alone is lovely with some rice or a naan if you fancy but added to some mini tortillas with grated cheese and brushed with some of the curry they are just amazing! I can't wait to hear what you think about this one!!

Peri Peri Whole Roast Chicken Traybake

If you love a roast chicken dinner on a Sunday but can't quite face it in this hot weather (which I don't blame you for, it is sooo warm!!), try this summery alternative instead! It is packed with flavour, a dump and go type dinner and you can completely customise with your favourite flavour of peri peri sauce, I use the medium but feel free to go hot or mild depending on how spicy you like it!! It is perfect for putting in the middle of the table and letting everybody help themselves and we served with some mini tortillas to make chicken wraps which went down an absolute treat too!
