Welcome to the Happy Healthy Kitchen meal plan 13! I think this is one of my favourite weeks so far! 🥰 continuing the theme of easy dinners, these are all super speedy and great for warmer days as they pack in lots of lighter, summery flavours! All dinners have over 30g of protein too and this is also a very plant packed week with over 14 different types of veg spread across the meals! 🎉 I really hope you enjoy and don’t forget to upload a picture of any recipes you make to be entered into the draw for the Ninja Crispi at the end of the month! Peri Peri Halloumi Tagliatelle
I reaaaally think that halloumi is a match made in heaven with Portuguese peri peri flavours so if you agree and you are looking for a meat-free Monday dinner or just something a bit different, you will love this peri peri halloumi tagliatelle! Just use your favourite peri peri sauce (I used the Nandos medium for a bit of heat) and you can customise to your favourite spice level!

Middle Eastern Beef Bowls
I have been loving these 'bowl' style dinners as the weather is staying warmer and they have also been really popular on the app too! These are inspired by middle eastern and Turkish style flavours and these were sooo tasty! The beef is sweet, smoky and slightly spiced and goes so well the sweet potato and a big dollop of hummus too (but I think it would also work amazing with some garlic sauce too! Not only is it tasty but it is also another dinner with over 30g of protein and plenty of fibre and nutrition from the spices, salad and veg too!

Sticky Chinese Beef Bowls
Crispy chilli beef is one of mine and Liams favourite things from the Chinese so I wanted to use that as inspiration for this dinner! Packed with protein and veggies, this is such a good dinner when you want something that tastes like a takeaway or a little bit more indulgent but it is SO easy and speedy! I served with some sticky rice and broccoli but this would also work well if you made extra sauce and tossed through some cooked egg noodles!

Mexican Style Prawn Fried Rice
This is one of those easy and speedy dinners which is great when you need a healthy dinner in a hurry and it is also a really good one for using up any leftover veg at the end of the week! I think this was one of my favourite meals this week, it was sooo flavorsome and contains half of your daily fibre requirements as well as being packed with over 30g of protein but still tasting really light and fresh! If fajitas or burritos are a hit in your house, I think you will love this one!!

Greek Style Chicken Tortilla Kebabs
I am sure you may have seen the viral tortilla kebabs going round on the internet so I thought I would do my take with this greek version! These are packed with lean protein from the chicken mince and I snook 2 sneaky veg into the mix too! Honestly I can see why these have gone viral, they are sooo tasty- slightly more time consuming than just a normal wrap but so worth it! This recipes makes 4 skewers so depending on how hungry you and your family are, feel free to double the recipe to make 2 each!
