Happy Healthy Kitchen- Meal Plan 11

Welcome to the Happy Healthy Kitchen Meal Plan 11! This week it is DUMP BAG EDITION! I am and have been sooo excited to share these recipes, I absolutely LOVE dump bag cooking- it really does save you so much time! These took just 30 minutes to prep, I chop all the veg I need and just divide across the bags, mix, label and then freeze! All you have to do is leave the dump bag out overnight to de-frost then add to the slow cooker or hob when you want to cook it! I am so excited to see what you think and hopefully they can make half term a little bit easier- have a wonderful week and don't forget this is the last week of the 'Eat Well, Spend Less Challenge' so if you do make any, make sure to upload some pictures. Cheesy BBQ Chilli Tacos

This is a great veggie dump bag that you can make by simmering on the hob until you are left with a thick, sweet and smoky taco filling which you can enjoy on its own with own with some rice or salad but I decided to add these to some mini tortillas and make some baked tacos! These are vegetarian but feel free if you want to replace the tin of taco beans with 500g of lean mince beef too!

Lasagne Loaded Potatoes

I love anything lasagne themed and lasagne loaded potatoes are no exception! This is a dump bag recipe for a slow cooker bolognese mix which you can just serve with any pasta of choice if you prefer but I have added the method below on how you can turn just a basic bolognese mix into an epic veggie and protein packed dinner, something a little more exciting than a standard spaghetti bolognese but just as easy (if not even easier!!)

Fajita Chicken Gnocchi

If you have never tried air frying gnocchi- take this recipe as your SIGN! This is one of my favourite recipes yet, I absolutely love gnocchi when it goes slightly crispy and when it is tossed through the saucy chicken fajita mix it is absolutely delicious. If fajitas are a win in your house, give this one a save!

Slow Cooker Sausage & Mash Pie

One of my favourite comfort foods ever is sausage and mash and you cannot beat a pie- introducing the best combo, the sausage and mash pie! It has a bubbly cheesy topping and a rich filling which actually has some sneaky veg in there! Finish with some optional gravy browning if you want it dark in colour and dig in!!
