60 Minute Sunday Meal Prep 16

Welcome to this weeks 60 Minute Sunday. We have a halloumi pizza rice for lunch, a cinnamon raisin protein breakfast loaf and the most moreish mini banana biscoff loaves! I have LOVED this week and we are even thinking about having the halloumi pizza rice for dinner again as it was sooo good! Halloumi Pizza Rice

This is one of my favourite recipes for when we have a few veg leftover to use and want a quick and easy dinner and I thought it would also be a really good meal prep idea too! We really enjoyed it this week with some lettuce and a drizzle of garlic mayo- it is great hot or cold and simply leave the pepperoni if you want to keep it totally veggie!

Cinnamon Raisin Protein Breakfast Loaf

If you liked my cinnamon raisin bagels, you will love this protein loaf made with cottage cheese. I am not the biggest lover of cottage cheese but I promise you can't taste it and it gives this loaf a huge boost of protein. It is lovely warm and toasted with a coffee in the morning and a great pre and post workout snack too!

Mini Banana Biscoff Loaves

I spotted this mini loaf tin on amazon and had to get one! They are fantastic, so good for portion control and the perfect size for a little snack and great for lunchboxes too! Filled with dark chocolate chips, mixed seeds, banana and topped with that lovely crumbled biscoff these have been a winner as a snack this week. I have popped the timings for if you wanted to turn this into a larger loaf too! Enjoy!
