60 Minute Sunday- Episode 28 (hidden veg edition)
Welcome to this weeks 60 minute Sunday where we spend 1 hour to prep a healthy breakfast, lunch and snack for the next few days- this week is all about 3 recipes with some sneaky hidden veg in them!! For breakfast we have double chocolate muffins (with 2 hidden veg!!) perfect with a dollop of yoghurt, berries or as a snack on the go!! Lunch is for the sausage roll lovers, they are cheesy chicken and also have 2 hidden veg in them (which Liam the sausage roll connoisseur has given them the green light!!🤣) and lastly as a snack I made a healthy chocolate dip for toast, rice cakes and for dipping with fruit !!!🍓 I hope you enjoy and don’t forget to share any pictures to be entered into the July challenge draw to win a Morphy Richard’s ice cream machine!!🩷
Hidden Veg Cheesy Chicken Sausage Rolls
I don't know about anybody elses other half but Liam could live on a Greggs sausage roll, he absolutely loves them!! These chicken sausage rolls aren't quite a Greggs but they are still sooooo soooo tasty!! They are packed with lean chicken mince, hidden broccoli AND carrot as well as melty cheddar. They're high in protein, perfect for meal prep lunches or snacks and they are freezer friendly for up to 3 months so make a great little thing to keep a stock of for when anybody gets hungry! I think these would be a great one to get the little ones involved in making over the summer holidays too!

Hidden Veg Double Chocolate Muffins
If you have any spinach and courgette haters, I promise you that this recipe will convert them!! These muffins make such a good on-the-go breakfast or snack! They are soft, chocolatey and naturally sweetened with honey and are packed with spinach and courgette that you genuinely can't taste as they both have quite mild flavours and when you blend them, they literally disappear into the batter (I actually promise you)! I added dark chocolate but feel free to add in any extras like berries, nuts or even some milk/white chocolate chips if you fancy too!

Hidden Veg Chocolate Spread
This chocolate spread is made from... roasted chickpeas!!!! I promise you wouldn't know! Roasting the chickpeas before blending takes away the 'beany' flavour and instead gives them more of a nutty flavour to try and imitate the flavour of nutella! This spread has gone down an absolute treat for us, it is lovely to dip with some fruit, great on toast or lovely to top your porridge with! It is a great way to sneak some extra fibre and a bit of protein too- can't wait to see what you think!
