Freezable Mini Protein Pancakes

I looove pancakes but really don't like the faff of making them on a busy morning so I thought I would prep a few to keep in the freezer and reheat when I need! These are packed with 12g of protein per 4 pancakes and make a lovely little breakfast with a dollop of yoghurt, some berries and some honey or a great little packed lunch option if you add some choc chips to the batter for your little ones too!

Storage & Reheating:

  • Fridge: Keeps for up to 4 days in an airtight container.

  • Freezer: Freeze for up to 3 months with baking paper between layers.

  • Reheat: Microwave for 20–30 seconds, place in the toaster or air fry at 170°C for 2–3 minutes.

I was apprehensive about these as I really dislike cottage cheese but my gosh they were light, fluffy, delicious! And did not taste anything like cottage cheese. A hit with everyone in the house. Will become a breakfast staple for us.
