Blueberry White Chocolate Loaf Cake

It is peak blueberry season at the moment and I wanted to make sure we’re making the most of them and get in all the antioxidants, vitamin C, K and manganese! They also taste sooo much better this time of year and I love blueberries and white chocolate together and this didn’t disappoint! It’s a lovely little afternoon snack with a coffee but also has a good amount of protein and fibre to make a great meal prep breakfast- it’s so good popped in the microwave for a few seconds with a dollop of yoghurt and some honey!!!

I feel like the mixture wasn't quite right in this cake. Tasted great but I the batter was very thick, It didn't relax in the oven before rising. I used frozen blueberries but I think there were just too many in the mixture and it was) for me) , too much berry not enough cake.
