Happy Healthy Kitchen Meal Plan 20
Welcome to the Happy Healthy Kitchen Meal Plan 20! I hope you are all having a good week and happy 6 weeks holiday to all the parents and teachers on the app too!🥰🩷 this week is a bit of fakeaway vibes and I tried to give 5 dinners that would be great for little ones to help out with making too! This is the last week to enter the July challenge, the winner of the Morphy Richard’s ice cream machine will be announced next week!!!🎉 (you need to upload 4 x recipes you have made in July to enter) Enjoy and have a great week!!🩷
Dump & Bake Mexican Meatball Orzo
The dump & bake recipes have been really popular on the app so far so I wanted to share another one- this time putting a bit of a Mexican twist on meatballs and orzo! It is soooo packed with flavour, super easy and hands off and also packs in plenty of veg, plenty of protein and can easily be made veggie by subbing the meatballs for halloumi too. Feel free to make the meatballs from scratch if you prefer, I wanted to keep this nice and easy so I used pre-made ones!

Healthier Filet-O-Fish & Air Fryer Fries
I don't know if this is a little bit rouge but every time I go to McDonalds, my go-to choice is a fillet-o-fish so I thought lets make a healthier version at home, all in the air fryer with some crispy fries to go with and a high-protein tartare sauce! This was sooo easy and fun to make and dare I say, tasted even better than the McDonalds version! The trick is to find cod or haddock in the supermarket that is more square in shape as it makes it a little bit easier but either way- this is a great fakeaway and I can't wait to see what you think!!!

Protein Packed Sweet Chilli Chicken Pizzas
Making a pizza base with greek yoghurt and flour is such a good way to get in some extra protein and cut out some of the additives in the bases of shop-bought ones too! We inhaled these sweet chilli chicken pizzas which have 5 different types of veg, 60g of protein per serve and are sooo easy to prep too. They are a great one to get the kids involved with over the holidays as well and you can completely customise to whichever toppings you prefer- feel free to skip the chicken and make it veggie or even sub the chicken for some pepperoni if that is your favourite topping.

Harissa Chicken Tortilla Skewers
If you haven't tried harissa, PLEASE use this recipe as your excuse to get some! Aldi have recently started to sell it but you can also get it easily at Asda, Tesco, Sainsburys, Lidl and Morrisons too as they all stock it! It has a really nice sweet but slightly smoky flavour and is SO good!! I have been seeing these pinwheel tortilla skewers online and wanted to share a recipe to the app as they are well worth the hype, so easy to do and are such a nice way to incorporate chicken mince into your weekly shop as it is a lot cheaper than beef and so flavorsome too!!
