60 Minute Sunday - Meal Prep 29

Hellooo and welcome to another week of 60 minute Sunday recipes! This week I’ve been focussing the recipes with iron-rich ingredients in mind, making it perfect if you're looking for easy ways to get more iron into your meals without overthinking it! It’s been something I’ve been asked a few times to do so I thought it might be helpful for others too!🩷 As always, you've got a breakfast, lunch and snack that you can prep in around an hour to make the week ahead so much easier and I really can’t wait to see what you think of these !! I inhaled the snickers baked oats so quickly that I actually ended up making another batch because when you warm them up a little bit they’re sooo good !! Enjoy guys and happy Sunday all!🩷🥜

Hot Honey Halloumi Orzo

I feel like any recipe where hot honey and halloumi are combined, it is always going to be a winner and this meal prep orzo is no exception. It’s made with a creamy high protein dressing, lots of different iron rich veggies (but feel free to add whatever you fancy or need to use) and tastes absolutely gorgeous cold for a meal prep lunch- I think this would also be such a lovely side at a BBQ too!!

Chickpea Cookie Dough Balls

I love trying to sneak chickpeas into recipes as a way to pack in some extra protein, fibre and iron! If you need a little afternoon pick me up or a good pre-workout option that you can prep in minutes, these are soooo good and a great one to get the little ones involved with over the 6 weeks too! I added dark chocolate chips but feel free to add in any little customs you fancy like raisins, 100s & 1000s or some chopped nuts!! They also freeze brilliantly and if you pop them in the microwave on full for 15 seconds they melt and taste AMAZING!!!

Snickers Baked Oats

Here is another baked oats option for you to try for breakfast and this time it’s inspired by one of the best chocolate bars- a snickers !!! OMG I can’t tell you how good these are, especially when you warm them up with a bit of Greek yoghurt! I love how popular the baked oats recipes are and I really can’t wait to see what you think about these ones!!!
