60 Minute Sunday Episode 35

Welcome to this weeks 60 Minute Sunday! This week it’s ‘Greggs Dupe Edition!’💙 we’re meal prepping donut baked oats, cottage cheese pizza slices and my healthier take on a Greggs sausage roll — all made in under an hour and perfect to grab through the week!! SEPTEMBER CHALLENGE- it is also the third week of the September challenge and this months giveaway is an ultimate meal prep set- basically EVERYTHING you will need for meal prepping breakfasts, lunches and dump bags toooo! Strawberry Baked Oat Donuts

I found some donut moulds on Amazon and I thought it might be fun to make some baked oat donuts and they were soooo fun!!! You can also use mini loaf tins but if you had neither and still wanted to make them I’d use roughly a 20cm square dish baking for around 22–28 minutes. Start checking at about 22 minutes — you want the centre set but still soft rather than dry!

Greggs Sausage Rolls

If you love a Greggs sausage roll then you’re in the right place! I have shared a few hidden veg sausage roll recipes but these ones use actual sausage rather than pork mince to make them taste a bit more like Greggs! They have 2 hidden veg and either make 10 large or 20 small ones and you can really customise them to suit what you fancy by using chicken or lean sausages for extra protein or using your favourite vegetarian sausage to make these meat free!

Greggs-Inspired Pepperoni Pizza Slices

I’ve shared a recipe for a Greggs style pizza using Greek yoghurt as the base but because the cottage cheese recipes are doing well on here and it’s getting more people to try cottage cheese I thought let’s use jt in this recipe too! It couldn’t be easier to make and I promise you can’t taste the cottage cheese at all! My top tip is to buy the slightly more expensive one if you can as they are usually a lot milder to taste and a lot more creamy too! Feel free to customise with any toppings you fancy and these also freeze brilliantly too!
