60 Minute Sunday Episode 31

Welcome to this weeks Sixty Minute Sunday! For this weeks meal prep we have cherry Bakewell cheesecake baked oats for breakfast, snickers protein bars as a snack and mini protein bread loaves (or 1 whole loaf if you haven’t got a mini loaf tin!!) this was such a good week of meal prep and they’re all high in protein and fibre too so will keep you nice and full!! Cherry Bakewell Cheesecake Baked Oats

I think these are the best baked oats I’ve ever had!!!!!!! I tried a cherry Bakewell cheesecake the other day and instantly thought- these need to be a baked oats flavour so if you are like me and love a cherry Bakewell- you will absolutely loooove these! They’re such a good breakfast to prep plus they are absolutely packed with protein and fibre too!! Feel free to leave the jam out if you don’t have any but I really recommend a few dollops of cherry jam added in as it takes it from a 10 to an 11!! I am so excited for you to try these!!!

Mini Protein Bread Loaves

These mini protein loaves are such an easy little savoury bake and perfect for breakfasts, lunches or snacks! They’re soft, fluffy and packed with around 9g protein each, plus you can completely customise them with any little extras you fancy like grated cheese, spring onions, herbs, chilli flakes or even cooked bacon or ham is sooo good too. I have been having them with some cream cheese and smoked salmon but they’re also great for picky plates or SOOOO good dipped in hummus !!!! If you don’t have a mini loaf tin you can turn the same mixture into one big loaf and bake at 170°C fan for 40–50 minutes until golden and cooked through!!!

Snickers Protein Bars

If you have tried and enjoyed the snickers baked oats you will loooove this protein bars!! They are such a good post-workout snack and just something handy to keep in the fridge for when you fancy a little snack but also want to keep on track with any protein goals you have! The protein, fibre and healthy fats combo from the oats, protein powder and peanut butter make them really filling too due to slowing down digestion!! Also feel free to use whatever protein powder you fancy- I used a vegan vanilla and it worked so well!
