60 Minute Sunday, Episode 30

Helloooo, happy Sunday!! This week’s Sixty Minute Sunday is all about protein!!! We’re making Banana Donut Bites, Biscoff Breakfast Bars and a Sushi Salad to get you prepped for the week! If you have ever wondered why protein is great for keeping you feeling fuller and more satisfied between meals, or is because it takes longer for our body to digest it which helps support steady energy levels!! So these are perfect to have ready in the to go for busy days when you want something filling, tasty and easy to grab too!! Biscoff Breakfast Bars

If Biscoff for breakfast sounds like your kind of thing, these are for you !! These Biscoff Breakfast Bars are soft, oaty and packed with little chunks of dark chocolate and crunchy Biscoff! They have 7g of protein per square from the cottage cheese being blended into the base (and I promise you can’t tell!!!) they are perfect for making ahead for busy mornings but I also love them as a post-workout snack when you want something a little more substantial (and delicious!) than your usual snack! I really recommend warming them up with a dollop of Greek yoghurt!!

Tuna Sushi Salad

One of Liams favourite lunch options to grab when he is out is sushi so I thought it would be fun to use the leftover sushi nori from this weeks meal plan and make a sushi style salad for lunches! This was absolutely amazing on its own, packed with colour and fibre but would also be brilliant with some cooked and cooled rice added to make it a little more filling! Feel free to leave out the sushi nori if you don’t have it as it would make a great filling on wraps but if you do fancy trying it, you can get sushi nori from the Asian section in most large supermarkets!

Air Fryer Banana Donut Bites

I had some more overripe bananas staring at me and thought I’d see if I could make mini donuts with them sure if inspired by the cinnamon sugar pretzels you can get too! WOW- They turned out sooo so well and make a lovely snack or sweet treat and the air fryer makes them so quick- the best part is 4 of them also have 10g of protein too! They are best enjoyed warm but you can easily reheat them in the microwave for a few seconds and I think next time I will definitely add some dark chocolate chips to the batter!!
